Altausseer Bergkern—A Treasure of the Alps (Altaussee/Steiermark)
Pure nature from the Austrian Alps: In the heart of the Salzkammergut, at the Erbstollen in Altaussee, the unique and natural rock salt Altausseer Bergkern is still traditionally mined through hard manual labor. Large blocks of salt are extracted from the mine, located 2.5 kilometers deep, using a drilling chisel. Once underground, the salt is hand-sorted, ground into various grain sizes, sorted, and stored.
Altausseer Bergkern: Pure Primordiality Meets Original Purity
As salt from evaporating parts of the primordial sea, the Altausseer Bergkern was brought to land about 250 million years ago, eventually being trapped deep beneath the rock layers of the Austrian and Bavarian Alps. Here, it remains to this day, shielded from all contaminants and negative environmental influences—completely original and free from pesticides and toxins of the modern industrial world.
Even in the Bronze Age, Austrian Natural Alp Salt found its way across long trade routes to various parts of Europe, where it was among the most sought-after and valuable goods. Today, regionality and short delivery routes highlight the enjoyment of this unique rock salt specialty. The absolute purity and an ever-unaltered full-bodied flavor, exceptionally mild and rounded despite its high salt content, also contribute significantly to its appeal.
Unique Composition
Unlike other natural salts, which are typically grayish to white or pinkish, Austrian Natural Alp Salt is characterized by its distinct reddish-brown-beige color. This is due to a high iron content and its wealth of valuable minerals such as calcium, magnesium, potassium, zinc, phosphorus, a small amount of natural iodine, and 78 other essential minerals for humans. All of these factors make the Altausseer Bergkern not only the mineral-richest of all rock salts but also one of the highest quality and health-promoting salts in the world. It is completely natural, unrefined salt, with no anti-caking agents or other additives such as iodine or fluoride.

A Treasure for Millennia
The traditional extraction of salt in Dürrnberg, Hallein, dates back thousands of years, as people from the Stone Age utilized the salty springs of the region more than 4,000 years ago. Around 700 BC, the Celts began mining the coveted salt using the simplest tools. Shortly before the birth of Christ, the area was conquered by the Romans, who preferred to circulate their own sea salt, which led to a temporary end to salt mining in Hallein.
After lying dormant for over 1,000 years, the Salzburg archbishops resumed salt production in 1198. Soon, the Hallein saltworks became one of the leading salt extraction facilities in the Eastern Alpine region and a significant source of income for the archbishops. However, with Salzburg’s incorporation into the Austro-Hungarian monarchy in 1816, the significance of salt mining in Dürrnberg began to decline. Finally, on July 31, 1816, the last remaining saltworks ceased operations in Hallein.
The Rebirth of Hallein Salt
Nothing has shaped Dürrnberg and the Hallein region as much as the salt that has been extracted here in huge quantities for millennia. Today, the large shafts are closed, and the numerous evaporation pans have been dismantled. However, a small salt manufactory has taken on the heritage of Hallein and produces Salzburg Natural Salt from the natural brine of the Wolf-Dietrich shaft, creating a true rarity. Since 2010, this white gold from Dürrnberg, awarded with the Salzburg Land Origin Certificate of the AMA Genuss Region, has been handcrafted again.
A Pinch of Tradition
As early as the Middle Ages, people came up with the idea of flooding the Dürrnberg shafts with water to dissolve the salt. The resulting brine was channeled into the town and heated in large evaporation pans until only salt remained. Both techniques are still used today. With crystal-clear spring water, the salt is dissolved deep from the mountain as natural brine, flowing directly to the salt manufactory for further processing. There, the brine is gently heated to 68°C in specially designed evaporation pans until very fine pyramid-shaped salt flakes form, which the pan masters scoop by hand several times a day in traditional craftsmanship. The subsequent gentle drying leaves behind the typical delicate salt crystals of mild Austrian boiling salt, perfect for everyday use and ideal for enhancing and refining sweet or savory delicacies.

Brine is salty water that is primarily of natural origin. A saturated brine contains 26% salt, meaning that the water can no longer dissolve additional salt. When a salt stone is placed in saturated brine, it will no longer dissolve. This serves as a test to determine whether a brine is saturated. If fresh water is added, salt will dissolve again. Natural brine typically comes from shafts and underground sources deep within the mountain, but it can also be produced by soaking salt blocks in water. For saturated brine, it is recommended to wait at least two hours, but preferably 24 hours, for the salt to fully dissolve.
Liquid Salzburg Natural Salt
Our brine is liquid Salzburg natural salt, produced in the historical brine works of the Bad Dürrnberg salt mine in Hallein. Using pure spring water, this ancient salty treasure of the region is dissolved from the rock of the Dürrnberg. Natural brine is used as a top-quality seasoning in fine cuisine. A teaspoon of brine is equivalent to a pinch of salt. Since the salt is already dissolved, the brine spreads better over dishes and does not draw out moisture. Salzburg natural brine is a product that remains completely untreated and unprocessed without mechanical or chemical steps – and you can taste the difference!
Medical Properties and Applications
Brine possesses antiseptic, disinfecting, and odor-neutralizing properties, making it ideal for cosmetic and medical applications. It has been used as a remedy for thousands of years and shows effectiveness in treating allergies, asthma, skin, digestive, and metabolic disorders. Himalayan Crystal Salt (Punjab, Pakistan)
Himalayan salt is perhaps the best-known of all rock salts and is referred to as Himalayan crystal salt due to its purity and crystalline structure. Characteristic of this natural salt is its pink coloration, which can vary from soft white-pink to vibrant pink-orange. This fascinating coloration is due to the natural minerals and trace elements contained in Himalayan crystal salt, particularly its high iron content.
Despite its name, this salt is not directly associated with the Himalayas, the highest mountain range in the world. The somewhat misleading term “Himalayan salt” comes from Peter Ferreira’s book “Water and Salt.” In reality, it is exclusively mined in the salt mines in the northern Pakistani province of Punjab, the foothills of the Himalayas known as the “Little Himalayas.”
In terms of flavor, Himalayan crystal salt has a fine and mild note that adapts perfectly to most dishes. It also has a highly beneficial effect when used in salt baths. Cubic Halite Salt (Punjab, Pakistan)
Our natural Cubic Halite salt, also known as “Salt of Kings” or “Diamond of Salt,” is a true jewel among rock salts. The purest of all untreated salts found in nature, it presents itself in a radiant natural white that sometimes appears almost transparent.
Another special feature of Cubic Halite salt lies in its extraordinary crystal lattice structure. The nearly perfect horizontal and vertical lines give it its characteristic cubic shape, especially prominent in the chunks. This structure causes the halite salt to break into rectangular cubes—a true rarity even among rare salts.
Halite (derived from the ancient Greek “halos” meaning salt) refers to the mineral containing 99.8% sodium chloride. Although halite salt occurs in salt deposits worldwide, the largest and purest deposits are also found in the Salt Range in the northern Pakistani province of Punjab. Here, the salt is mined under optimal conditions, ensuring its exceptional quality.

Persian Blue Salt (Semnan, Iran)
Persian Blue salt, also known as “Persian Gold,” is an extraordinary natural salt from the Semnan region in Iran. It features a fascinating color palette that ranges from pure white to violet and sapphire blue hues. This unique coloration results from a specific displacement of vacancies in the crystal lattice caused by the mineral sylvin. Sylvin, a potassium chloride, only deposits in halites.
As one of the rarer salts, Persian Blue salt is often priced higher than, for example, Himalayan crystal salt. The high potassium content also leads to an initially very intense flavor, which, however, lasts only briefly. After this first salty impression, a pleasant mild spiciness remains, making this natural Persian salt particularly versatile. It is excellent for finishing dishes and enriches numerous recipes with its special note.
Hawaiian ‘Black Lava’ Salt, ‘Alea Red Gold’ and ‘Bamboo Jade’ (Hawaii, USA)
Hawaiian salt is a highly traditional sea salt deeply rooted in culture, with its three variations impressively reflecting the colors of the Hawaiian landscape: deep black symbolizing the volcanoes, bright red representing the sacred Alea earth, and rich green reflecting the lush vegetation of the islands. All our Hawaiian salts are made from classic white sea salt, which represents the water, and harvested off the coast of Molokai Island.
Because substances that are not food are used in their production, the varieties ‘Black Lava’, ‘Alea Red Gold’ and ‘Bamboo Jade’, popular among chefs as gourmet salts, are classified as “decorative salts,” each carrying unique aroma notes.
The ‘Black Lava’ salt contains activated charcoal, which not only accounts for its characteristic black color but can also offer health benefits. Indian Black Salt ‘Kala Namak’ (Pakistan)
‘Kala Namak’ is an exceptional rock salt from Pakistan produced by cooking rock salt with the succulent plant Salsola Stocksii at over 750 degrees. The resulting sulfur compounds give it its distinctive aroma reminiscent of boiled eggs. Typical for ‘Kala Namak’ is its dark purple to black coloration, resulting from both the cooking process and the iron oxide contained in the original salt.
Its unique color and intense aroma make ‘Kala Namak’ an indispensable component of Indian and Ayurvedic cuisine. It is often used in the preparation of chutneys, masalas, and rajitas and is ideal for enhancing vegetarian and vegan dishes with a distinctive egg-like flavor. Pyramid Salt ‘Indian Fleur de Sel’ (Pakistan)
Pyramid salt , also known as ‘Indian Fleur de Sel’, is a natural sea salt from Pakistan obtained through a careful traditional process. On hot and windless days, thin salt flakes form on the surface of the seawater in the salt pans. These delicate flakes are then hand-scooped with a wooden ladle.

Bolivian Pink Salt (Bolivia)
Buried beneath a volcanic layer in the high plains of the Andes mountain range in western Bolivia, Bolivian pink salt is traditionally hand-mined and transported to the lowlands via ancient Inca caravan routes. Its characteristic and natural pink hue comes from oxidized iron, while its mild and fine flavor makes it a versatile seasoning in the kitchen.
This exclusive and natural boiling salt is produced in the show saltworks of the Salzburg Salt Worlds by Salinen Austria AG. The pure mountain spring water is used to dissolve the salt from the Alps, which is then gently heated in brine pans. Tiny crystals form on the surface of the pans, combining into pyramid-shaped flakes. These delicate and crispy flakes are carefully skimmed to preserve their quality.

Our Smoked Salts
Due to its characteristic BBQ effect, smoked salt is particularly popular in American cuisine, but it also delights lovers of intense grilling flavors worldwide. The tradition of smoking salt has its roots with the Vikings, which is why our high-quality smoked salts are produced using a method that dates back to the “Northmen.”
In this process, selected smoking materials are hand-poured into the designated chamber of the smoking oven, where they slowly smolder. This process creates the characteristic smoky flavor that adheres particularly well to sea salt due to its rough surface. For optimal absorption of the smoke aroma, medium-grained sea salt is primarily used in the production of smoked salts. The duration of each smoking interval, the total smoking time, and the type of wood used are crucial for the flavor and color of the final product and also influence the individual price.
Interestingly, variations can occur within different batches of smoked salt, reflecting specific outdoor temperatures or weather conditions, resulting in a unique product each time.

Due to the extensive production process, the output is limited to a few kilos per month, making this salt an absolute rarity and delicacy. With its unique aroma, Danish smoked salt enriches a wide variety of dishes and is a must for gourmets and lovers of intense flavors.
Alder Smoked Salt (Germany)

This process extends over more than 16 days and includes three smoking intervals each day, during which the salt is regularly turned and aired to evenly distribute the smoke intensity. Compared to Danish smoked salt, alder smoked salt has a slightly higher residual moisture, giving it a different texture.
